his healthy spiced tahini banana muffin recipe will be a new favourite go-to during the week! Naturally sweetened with maple syrup and bananas and provides a super moist and flavourful texture using almond flour and tahini. Easy to make for a great breakfast or snack idea! (gluten free and cna be made dairy free)
- 2 large overripe bananas, mashed
- 75.6 grams tahini
- 11.25 maple syrup
- 2 eggs
- 1 tsp vanilla
- 450 grams almond flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp nutmeg
- 1/4 tsp salt
- Coconut oil
- Optional>
- 113 grams mini chocolate chips
- Flaked sea salt
1. Preheat oven to 325°F (180°C).
2. Lightly brush a 12-cavity muffin pan with coconut oil or use muffin liners.
3. Using a mixer, combine mashed bananas, tahini, maple syrup, eggs, and vanilla.
4. Mix until thoroughly combined and smooth. Add in Almond flour, baking soda, spices, and salt.
5. Fold in chocolate chips if desired. Fill prepared muffin pan.
6. Bake for 20-25 minutes or until toothpick inserted comes out clean. If desired, sprinkle with flaked salt once out of the oven.
7. Makes about 10-12 muffins.
